Ground beef Recipe

I enjoy Mexican food so a really good ground beef one pot recipe to me is a Mexican Beef Taco recipe.

Ingredients

  • 1 lb ground beef
  • 2/3 cups of water
  • 1 oz taco seasoning mix
  • 1 can tomato paste
  • 1 or 2 jalapeno peppers to taste
  • 2 medium size tomatoes
  • 1 onion
  • 1 package taco shells
  • Preparation
    • Chop the onions, jalapenos and tomatoes
    • Heat your pan and brown the ground beef
    • Drain the meat
    • Cook the onions until softened approximately 3 to 4 minutes
    • Add the meat back in, with the water, seasoning mix, tomato paste, tomatoes and jalapenos. Bring everything up to a good simmer while stirring lightly for 10 min.
    • You can heat the taco shells on medium in a toaster oven for 2 to 3 minutes, or 1/2 to 1 minute in your microwave depending on your preference
    • Take everything to the table, build yourself some tacos, make a salad if you want and enjoy.

Chicken Recipe

Chicken and rice is a good simple cheap recipe that can be modified several ways. I will stay with the Mexican theme this time.

Ingredients

  • 2 chicken breasts
  • 1 cups of rice (your choice of brown or white )
  • 1 oz Spanish rice seasoning mix
  • 1 can diced tomatoes
  • 1 small white or yellow onion
  • 2 or 3 jalapenos
  • Tortillas your favorites either flour or corn
  • 1 bag of your favorite chips
  • Preparation
    • Cube the breast meat
    • Chop the jalapenos and onion
    • Heat the pan and brown the breast meat and set it out
    • Add 2 cups of water, bring to a boil add the rice and cook till done (approximately 15 to 20 min, test to suit yourself) drain any excess water
    • Add seasoning mix, chopped onion, diced tomatoes, and chopped jalapenos over low heat while stirring to blend

This is the first one pot meal I can remember, also probably the easiest to prepare. German sausage and sauerkraut only requires 2 ingredients. That makes this not only a cheap one pot recipe, but also very easy and it is tasty.

Ingredients

  • German sausage of your choice
  • 1 or 2 cans of sauerkraut (1 can =3 to4 servings 2 cans=6 to 8 servings)
  • Preparation
    • Cut the sausage into 3/4 to 1 in pieces
    • Heat the pan and brown the sausage to your taste
    • Add the sauerkraut put the lid on for 7 to 10 minutes stir well, turn heat down to a simmer for 5 more minutes
    • Take it to the table, make yourself a salad if you want and enjoy can be refrigerated and reheated or eaten cold

Vegetable Recipe

This is a vegetable and eggs recipe that you can just clean the refrigerator out to make. That should keep it well within the cheap one pot recipe category.

Ingredients

  • 2 tablespoons of olive oil
  • 3/4 lbs of potatoes

  • Heat a large cast-iron or nonstick skillet at medium heat. Add the oil and potatoes cover and cook stirring several times until they soften, about 8 minutes
  • Now add the onions and sliced vegetables and cook uncovered stirring occasionally until they are tender and slightly browned about 10 minutes. Stir in the herbs. Move the vegetables to the outside edges of the pan.
  • Turn the heat to medium-low and add the eggs to the center of the pan. Cook while stirring until the eggs are soft scrambled, around 2 minutes.
  • Stir the leafy greens into the eggs. Remove from heat and stir the complete pan to combine while adding the salt.
